Quarry Fun and Yogurt Parfaits


Who doesn't love swimming on a Saturday afternoon in June?  Last weekend we headed to the Quarry with some friends for some fun in the sun.  

Before we made the little trip down the gravel road, our friends stopped here to have brunch.  I made a breakfast pizza and yogurt parfaits.  Super easy and super yummy.  After demolishing both the pizza and parfaits, we loaded the babes in the car and took off.  We lasted most of the afternoon before getting stuck in a downpour.  The highlights were a (big) snake sighting, a dragonfly attack, and Baby Scarlet falling asleep sitting up.  I'd say it was a successful swimming day.  

Below you will find the ridiculously easy parfait recipe.  These would be great if you are having overnight guests.  They would also be stars of a brunch or just for an easy breakfast.  Hope you try!

Yogurt Parfaits

Ingredients
4 cups vanilla greek yogurt (any flavor will do)
2 cups sliced strawberries (or any other berry)
3/4 cup graham cracker crumbs
pinch of salt
2 T brown sugar
6 T melted butter

Directions
1.  Mix melted butter, brown sugar, salt and graham crackers together in bowl.
2.  Layer yogurt, berries, then graham cracker crunch.  Continue layering in glasses until full.
