Vanilla and Peanut Butter Chip Cookies



It's Wednesday already?  Gosh, it snuck up on me!  

These cookies are from averie cooks and are nice and puffy.  They're pretty simple, but they don't make too many cookies.  You can be like me and make them kind of mini so they last longer.

These cookies have a cinnamon bite with a little bit of peanut butter flavor.  They are quite different from other cookies I've made before.

Puffy Vanilla and Peanut Butter Chip Cookies

Ingredients
1/2 cup butter flavored shortening
1/2 cup white sugar
1/4 cup packed brown sugar
1 egg
1 tablespoon water
2 teaspoons vanilla
1/4 teaspoon cinnamon
pinch of salt
1 1/2 cups all purpose flour
1 cup peanut butter chips

Directions
1.  Preheat oven to 375 degrees.  Spray cookie sheets or lay with parchment paper.
2.  Mix shortening, sugars, egg, water, and vanilla until creamy.
3.  Add in dry ingredients.  Mix in chips.
4.  Refrigerate for 15-30 minutes.
5.  Scoop and roll balls of cookie dough and place on cookie sheets.  Bake for 8-10 minutes. (Makes 3 dozen mini cookies)
6.  Let cookies cool on sheet for 5 minutes and then remove.
